Ingredients you will need:
  • Cooking Spray
  • 2 tablespoons packed light brown sugar
  • 1 tablespoon chili powder

  • 1/8 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 6 (6-ounce) salmon fillets, skin and any pin bones removed
  • 1 tablespoon olive oil

Quick and Easy Chinese Chicken Salad Recipe!

This salad takes about 15 minutes to make and is a healthy alternative to most quick and easy college meals. Give it a try and tell us what you think!

CHINESE CHICKEN SALAD
1 head shredded cabbage or iceberg lettuce
3 green onions, chopped
2 tbsp. sesame seeds, toasted
2 tbsp. almonds, slivered, toasted
Chopped cooked chicken
1 pkg. Top Ramen noodles (oriental or chicken flavor, crushed in pack by hand)

DO NOT COOK noodles - set aside. Save seasoning packet for dressing.

DRESSING:

1/8 c. sesame oil
1/8 c. vegetable oil
1/4 tsp. black pepper
3 tbsp. white vinegar
2 tbsp. sugar
1/2 seasoning packet from noodles

Toss all prepared salad ingredients. Add dressing. Just before serving, toss with crushed Ramen noodles. (Once tossed with noodles it cannot be saved for later, the noodles get soggy.) Serves 4.
